I made this recipe after finding my inspiration on Kate L’s blog, http://sanfranshakti.blogspot.com/. I changed it up a bit by adding mushrooms and peas (both canned and sugar snap peas). Make sure to use whole wheat or brown rice pasta and the freshest ingredients you can find!
2 cups uncooked whole wheat pasta (4 cups cooked)
Sugar Snap Peas
Lemon Avocado Sauce
Juice of 1 Lemon
1 cup water
Sea Salt & Pepper to taste
1 Clove garlic chopped
(Combine all ingredients in a blender or food processor)
Heat gradually until desired warmth and then top off your pasta with this delish, zesty sauce and the sugar snap peas…mmmmmmm!
