Avocado Lemon Pasta

I made this recipe after finding my inspiration on Kate L’s blog, http://sanfranshakti.blogspot.com/. I changed it up a bit by adding mushrooms and peas (both canned and sugar snap peas). Make sure to use whole wheat or brown rice pasta and the freshest ingredients you can find!

2 cups uncooked whole wheat pasta (4 cups cooked)
Sugar Snap Peas
Canned Peas

Lemon Avocado Sauce
1 Avocado
Juice of 1 Lemon
1 cup water
Sea Salt & Pepper to taste
1 Clove garlic chopped
(Combine all ingredients in a blender or food processor)

Boil pasta while making your avo-lemon sauce.

Then place mushrooms and canned peas into a small pot and top with sauce mixture.

Heat gradually until desired warmth and then top off your pasta with this delish, zesty sauce and the sugar snap peas…mmmmmmm!

As a D-1 collegiate athlete with a background in nutrition and anatomy, and an internship with a naturopathic center for healing, I found myself wanting to help people achieve healthier, happier lives. In 2010, my quest to bring health and happiness to others lead me to enroll with the Institute of Integrative Nutrition in New York to become a holistic health coach. Currently, I live in LA and am training with Dharma Mittra to obtain my 500 hour yoga certification.
