Project: Coachella

I have wanted to experiment with making my own version of a “Larabar” FOREVER now. So, with my upcoming road-trip to Coachella this weekend….I finally got my butt in gear and did it! I had one for breakfast today (as I have no food in the house since I will be going out of town) and it was de-li-ci-ous. I hope you enjoy these bars as much as I do 🙂

Ingredients:
1 cup sprouted raw quinoa (soaked for 1 day)
1 1/2 cup pitted dates
1/2 banana
1 cup soaked almonds (soaked at least 1 hr)
1 Tbs Coconut Oil
Handful of Goji berries
Maca Powder
Cacao Nibs

Directions:
Mix nuts in a food processor
Add dates, one at a time
Add quinoa
Add banana, goji maca & nibbs
Add coconut oil (be sure not to mix for too long after adding the oil!)
Use spatula (or hands) to spread flat on a cookie sheet
Chill in the freezer for 1 hour

I like to cut mine in bar form as it’s easier for travel, but you can also try rolling these into balls and coating them with your favorite treat like coconut flakes or more cacao nibbs.

As a D-1 collegiate athlete with a background in nutrition and anatomy, and an internship with a naturopathic center for healing, I found myself wanting to help people achieve healthier, happier lives. I quickly came to realize that I wanted to work with preventative therapeutic methods promoting active, energetic lifestyles rather then focusing on treatment centered around prescription drugs and the increasingly paramount “band-aid” mindset. From there I've studied with Shiva Rea and obtained a certification to work with children and at risk youth. In 2010, my quest to bring health and happiness to others lead me to enroll with the Institute of Integrative Nutrition in New York to become a holistic health coach. Currently, I live in LA and am training with Dharma Mittra to obtain my 500 hour yoga certification. I love to share my lifelong journey of finding balance, wellness and happiness in all aspects of life!
